i really didnt know panch phuron was a thing, i always thought it was my own amalgam confusing indian spices and cultures together (my pa had this phrase ‘you’ll confuse the flavours’), but its straight up bengali apparently. i go light on the fennel and luuuv fenugreek seeds, and add nigella if i have them, it really makes a whack of flavour. but frying cumin seeds melts me. and the pop of mustard!
